This was a simple dish and very good for you.
1 cup dice cooked turkey (I used a turkey thigh that had been grilled), you could use chicken
2 cups cooked quinoa
1 cup vegetable broth or other stock
1 T chopped shallots, about 1 clove
1 clove of garlic, minced
3 mushrooms, sliced
1/2 med tomato diced
1 T olive oil, or peanut oil
saute the shallots and garlic in the olive oil for 2 minutes, add the mushroom and cook for 1 minute, now add the turkey and cook for 2 more minutes. Add the quinoa and the tomatoes and stir gently for a minute and then add the stock and and continue to stir gently. Serve when heated through.
Taylor, for a vegetarian version, just add more mushrooms and eliminate the meat.

David took me the the Istanbul Palace on Goose Creek for my birthday today and it was ***
we had an order of hummus which was pretty good, the pita a little too commercial.
Then we had lentil soup which was made with red lentils and potatoes and was excellent.
For lunch we shared a gyros and a falafel sandwich and both were excellent. It was my third time there and I recommend just staying with the basic Mediterranean foods; kabobs, gyros, hummus and falafel. Stay away from the Turkish dishes.
